THE OLIVE MILL


Today the Galantino Mill uses olives from the Fenice family estate and from 2.000 reliable growers. Careful handling of the olive fruits at the best stage of ripeness, careful selection, washing and crushing in the great stone olive mills, cold pressing and centrifugal separation, 
enhance the flavour and fragrance of Galantino Extra Virgin Olive Oil.
After laboratory analysis and organoleptic assessment, and only then, does our Master of Olive Oil select and certify the oil.
This noble liquid is then stored in huge underground vats with a 
temperature constant to 13°-18° C. As and when required, small 
quantities at a time are racked off and bottled , so as to keep the fine aromas and properties of the olive oil intact.

 


     QUALITY PRODUCTION SCHEDULE

Since 1928 the oil press company "Frantoio F.lli Galantino" produces Extra Vergin Olive Oil using olives from "The fenice" family estate and from 2.000 reliable growers.

Product description

- Area : north of Apulia ( Family estate "La Fenice", Molfetta - Bisceglie
  Bitonto -Andria - Trinitapoli - Canosa di Puglia );
- Crop method : hand-picked;
- Crop season : at the best stage of ripeness starting from the middle of october up to the end of december
- Olives variety : 60% Ogliarola - 40% Coratina;
- Olive storage : sheltered, very breeze, for about 24 hours.

Production process

- Cleaning : by striping the olive leafs and washing;
- Pressing : by crushing in the great stone oilve mills;
- Kneading : by cold working;
- Extraction : by cold pressing;
- Quality control : laboratory analysis and organoleptic assesstment;
- Storage : huge underground vats with a temperature constant to 13-18° C;
- Bottling : In breezy and clean rooms according to the directives of the health care depatment.

- Aroma : delicete and exquisite

- Acidity : starting from 0.15% up to 0.35% (M 1%)

- Use :raw salads, bruschette, roast grilled fish, vegetables, especially good for frying food..
